The 15 / 15 / 15 Coffee Rule: Why Freshness Changes Everything

The 15 / 15 / 15 rule is all about timing:

  • Green (unroasted) coffee beans last about 15 months
  • Roasted coffee beans are best within 15 days
  • Ground coffee loses flavor within 15 minutes

1. Green Coffee Beans: 15 Months

Green coffee beans can last up to 15 months when stored properly—cool, dry, and away from light.

But once heat hits those beans? Everything changes.

2. Roasted Coffee Beans: 15 Days

Roasting unlocks the flavor, but it also starts the clock.

After roasting, coffee begins to release gases (called degassing) and gradually loses its complexity and vibrancy. While coffee doesn’t instantly “go bad,” it tastes best within about 15 days of roasting.

That’s when you’ll experience:

  • Brighter, more defined flavor notes
  • Better aroma
  • A fuller, more balanced cup

After that window, flavors start to flatten and fade.

3. Ground Coffee: 15 Minutes

Once coffee is ground, its surface area increases dramatically, and it begins to lose aroma and flavor almost immediately.

Within 15 minutes, much of what makes coffee taste amazing is already fading.

That’s why we always recommend:

  • Grinding right before brewing
  • Only grinding what you need
  • Brewing immediately after grinding
